Fish ragout is an easy to make one pot seafood recipe. If you feel too lazy to cook a two or different course meal, go ahead and give this a try. This one pot seafood meal is also a great comfort food.
Ingredients:
Onions – 4 + 2
Tomatoes – 3
5 to 6 green chillies (more if you like the heat)
Garlic – about 10 cloves
Red capsicum – 1
Assorted Vegetables – 1 kg
Sweet potatoes – 500 gm
Choice of seafood – 1 kilo
Bay leaf – 1
Tomato puree – 1/2 cup
Paprika – 1 tbsp
Nutmeg – 1 tsp
Salt to taste
Some Dry fish and Maggi seasoning cube (Optional)
Cook four onions, tomatoes, green chillies, garlic and the red capsicum with a little water until soft. Cool and blend it into a smooth paste, and set aside.
Chop the vegetables into large chunks.
Roast the dry fish on an open flame for a couple minutes.
Heat oil in a large pot, add a bay leaf and two thinly sliced onions and saute for a couple of minutes.
Add the tomato puree and cook until the raw smell disappears.
Add paprika, nutmeg powder and maggi seasoning cube. Fry these on a low flame for a couple of minutes.
Now add the chopped vegetables except the caultiflower and sweet potatoes. Mix well to coat, and season with salt.
If using the dry fish, go ahead and add it now.
Now add about a liter of water and let this cook covered until half done.
Add the ground tomato paste and give it a good mix. Add the sweet potatoes and cauliflower and adjust the seasoning. Cover and cook for about five minutes.
Add the fish and gently gently move the fish around so it’s immersed in the sauce. Cover and cook until the fish is fully done (about ten more minutes)
Your fish ragout is ready! Serve it up in a bowl with the juicy sauce. You really don’t need anything else to go with it.
Your super easy, one-pot seafood meal is ready. Enjoy your fish ragout by itself or with some bread.
