Easy No-Meatballs 🍝 easy to make and the perfect meat-free alternative you can make at home!
Serves 16 balls:
▪️ 1 red onion, diced
▪️ 2 garlic cloves, crushed
▪️ 1 can black beans, drained
▪️ 1 can green lentils, drained
▪️ 1 tbsp tamari (see FAQ’s)
▪️ 1 heaped tsp paprika
▪️ 1 heaped tsp ground coriander
▪️ 2 tbsp tomato puree
▪️ 1 cup oats, 100g (or ground almonds)
1️⃣ To a food processor add all the ingredients above and pulse into a paste (don’t over blend them you want a little texture not a puree)
2️⃣ Shape into balls and place on a baking tray and bake at 200C (390F) for 20 minutes
3️⃣ Finally mix into your favourite pasta sauce (I made a very simple tomato one you can find a tomato pasta sauce recipe on my reels) and serve onto your pasta
FAQ’s:
➡️Not gluten-free? You can swap Tamari for Soy Sauce
➡️Can’t tolerate oats? Use ground almonds instead
➡️Which lentils do I use? I buy the tinned green lentils available in most supermarkets
➡️Can you fry the balls instead of baking? Absolutely, just add to a pan with oil until crispy
➡️How long do they store? Once baked you can store them in the fridge for up to 2 days.
➡️Can I freeze them? I haven’t tested this but feel it would work both before baking them or after baking them. I think it would work better before baking though to hold their shape better.
➡️What else can I use them in? How about a meatball sub sandwich… that sounds good!
