Spicy Ratatouille

INGREDIENTS
Tomato Sauce: 2 big cans tomato sauce, 4 vine tomatoes, 3-5 tablespoons olive oil, 1 yellow onion, 3-5 cloves of garlic, fresh basil, oregano, crushed red pepper, salt and pepper.
Ratatouille: 2 red peppers, 3 zuchinni, 2 small eggplants, 2 pounds of spicy sausage.

STEPS
Make the tomato sauce by chopping up the onion and putting it in a large sauce pan on the stove. Add olive oil and let it heat up until the onions are translucent. Mince the garlic cloves and add to the pan along with your desired amount of oregano and crushed red pepper. Let it all simmer while you roughly chop up the tomatoes. Squeeze the tomatoes and tear them apart then add in the tomato sauce and two handfuls of basil. Let the sauce simmer while you chop up the vegetables and chop up or crumble the sausage. Put all the veggies and meat in the crock pot then add the sauce. Cook on high heat for 5 hours. Enjoy!

Crockpot Chicken (served with quinoa and roasted broccoli and cauliflower)

INGREDIENTS
Chicken: 1 whole organic chicken, 1 lemon, 1 yellow onion, 4-5 cloves of garlic, 2 tablespoons of paprika, 1 tablespoon of cumin, 1 tablespoon of thyme, 1 tablespoon black pepper, salt to taste.

STEPS
The chicken will take longer than the quinoa and veggies.
Cut the onion in quarters and put three quarters in the crockpot and the last inside the chicken cavity. Quarter the lemon and squeeze two pieces into the crockpot and leave in the bottom, then put the other two pieces inside the chicken cavity. Roughly chop the garlic and put some in the bottom of the crockpot then some inside the chicken cavity (use your discretion). Mix all the spices together then pat the chicken dry and rub the spices all over it and pour any extra inside the cavity. Put the chicken in the crockpot and cook on high for 5-7 hours.
