4 salmon fillets, skin on
2 tablespoons olive oil
Juice from 1 lemon
2 cloves garlic, minced
1 tablespoon honey
1 teaspoon smoked paprika

Instructions:
Preheat your wood-fired oven to a high temperature, around 220°C (428°F).
In a bowl, mix together the olive oil, lemon juice, minced garlic, honey, smoked paprika, salt, and pepper. Coat the salmon fillets with this mixture, ensuring they are well-covered.
Place the salmon fillets on a baking tray, skin side down, and sprinkle the fresh herbs over them.
Place the tray in the oven and cook for 10-12 minutes or until the salmon is golden pink and fully cooked.
