Welcome to Easy-Peasy Foodie Channel! In today’s video, I’m making a delicious and creamy butternut squash soup with chickpeas. This easy and healthy recipe is perfect for fall and winter, offering a warm and comforting meal that’s both vegan and gluten-free.
Ingredients:
Butternut squash
500g
Cooked chickpeas
½ cup
Garlic
2 cloves
1 Pepper
100g
Shallot
140g
1 Pepper
100g
Fresh tomatoes
125g
Vegetable broth
3 cups /750ml
Coconut cream
½ cup
Spices: Coriander 1 tsp, Paprika 1 tsp, Dried thyme 1 tsp, Black pepper ½ tsp, Cayenne pepper ¼ tsp (optional), Salt 1 tsp
Olive oil
3-4 tbs
Fresh herb to garnish ( Chives)
Instructions:
1.Peel and deseed the butternut squash, then cut them into same size
to cook evenly
2. Fry the garlic and shallot on medium heat for about 5-6 minutes.
3. Add pepper and fresh tomatoes and fry for another 2-3 minutes
4. Add the cubed butternut squash and mix well together before adding the vegetable broth or water
5. Add the spices and mix well together and cook on medium heat for 40 minutes or until butternut squash are tender
6. Carefully blend with immersion blender or with standard blender in batches. then add the coconut cream. Soup is ready👌
7. Fry the chickpeas and add to the soup.
