INGREDIENTS: marinade

* 2 Cornish chickens cleaned and halved.
* 1 cup whole milk
* juice of half a lemon
* 3 eggs
* 1 tbsp dry thyme
* 1/4 tsp smoked paprika
* 1/4 curry powder
* 1/4 tsp baking powder
* 1/2 tsp salt, or amount to taste
* a pinch of freshly ground black pepper

INGREDIENTS: breading

* 1 cup all purpose flour
* 1 tsp fennel seeds
* 1/2 tsp all purpose seasoning
* 1/4 tsp smoked paprika
* 1/4 tsp curry powder
* 1/6 tsp / pinch of cayenne pepper (optional)
* 1/2 tsp salt
* 1/4 tsp baking powder
* 1 cup corn starch
* pinch of freshly crushed black pepper
* 1/2 tsp granulated garlic
* 1/2 tsp granulated onion
* 1/2 tsp ginger powder

***oil for deep frying. Core temperature of fried chicken must be at 165 degrees Fahrenheit, or above after frying. Fry on medium to low heat for 10-12 mins. May need to adjust the heat periodically. ***
