πCreamy Chicken and Gravy on a Pillow of Mashed Potatoes π₯
Ingredients:
4 chicken thighs, diced (you can use what you have) ππππ
3-4 cloves garlic, minced π§π§π§-π§
4 tablespoons butter π§π§π§π§
salt and pepper π§
3 tablespoons flour
1 can chicken or veggie broth ππ₯¬
1 cup half & half or heavy cream π₯
2 tablespoons fresh parsley, chopped πΏ
1 cup frozen peas, optional
Instructions:
1. Make mashed potatoes however you like them.
2. In a medium/large saucepan under medium-high heat, melt 1 tablespoon of butter and add diced chicken and garlic. Season with a pinch of salt and pepper. Saute until chicken is slightly browned. Remove chicken using a slotted spoon.
3. Add remaining 3 tablespoons of butter and as it melts, scrape up the browned chicken bits from the bottom of the pan. Add flour and whisk/stir until flour is incorporated into butter. Cook for 1 minute. Whisk in broth. Cook for 2 minutes. Add half & half and whisk. Stir in parsley and peas. Turn heat down and let simmer for 5-10 minutes, stirring occasionally.
4. To serve, plate a mound of mashed potatoes and ladle the creamy chicken and gravy over the top.
