Cooking With Mandy June – Episode 004 – Nashville Style Chicken Sandwiches with Fresh Cut Watermelon

Hi everyone! On today’s episode, we will be sharing a super delicious and fun dinner idea.
Nashville Fried Chicken Sandwiches paired with potatoes wedges with a dipping sauce and cold juicy watermelon.
Pre heat you’re oven to 400 degrees.
We used 4 large potatoes and cut them into wedges.
Toss them with olive oil and salt and place on a tray lined with parchment and roast for 30-35 min until golden.
While the potatoes are roasting we’re going to prepare our chicken.
We have some thin sliced chicken breast.
While we bread them have a large skillet with oil in it heating up on medium high heat.
You’ll need two separate bowls .
In one bowl place 1 cup of milk, 2 eggs and 2 tablespoons of hot sauce in the bowl and wisk.
In the second bowl place 1 1/2 cup of flour, 1/3 cup of cornstarch, 1 tsp of baking powder and a tsp each of salt and pepper.
Mix together.
Take a chicken breast and coat it with the flour mixture and then dunk in the egg mixture and then back into the flour mixture .
Then place in the hot oil.
Coat remaining chicken breast the same way and fry for about 3/4 min on each side until golden brown.
While the chicken is frying you’ll want to make the sauce for the chicken.
In a bowl melt 4 tablespoons of butter, add to it a tsp each of salt and pepper, 1 tsp of garlic powder, 1 tsp of smoked paprika and a tablespoon of brown sugar and mix together.
After the chicken is golden and crispy remove and place on a tray.
Brush sauce onto both sides of the chicken .
Now we’ll need to make the dipping sauce for the potatoes.
Take 1 cup of sour cream, add a tsp each of salt and pepper, the zest of about a half of a lemon and a tablespoon of lemon juice and grate a clove of garlic into the sour cream and mix.
Now to make the sandwich, take a bun, we used Hawaiian style buns.
Place a chicken breast on the bun and top with coleslaw and dill pickle slices and place the top of the bun on.
Serve with potato wedges and sliced cold watermelon!
