Chicken Mandi

1 whole chicken
2 tbsp ginger garlic paste
Mandi Masala
1 tbsp coriander powder
1 tsp black pepper
1 tsp cumin
1 cinnamon stick
3 cardamom pods
3 cloves
1 mace
1 bay leaf

1/2 lemon
1 tsp haldi

1/2 cup oil
2 tbsp ghee
1 tsp cumin seeds
3 cinnamon sticks
10-15 black pepper balls
2 medium onions
1 tbsp ginger garlic paste
2 tsp chilli flakes
2 tsp hot chilli
2 tsp paprika
1 cup tomato
4 cups water
3 tsp salt
4 cups rice
Zest of one lemon
2 tbsp oil

Method

1) Marinate the chicken as shown in the video
2) In a large pot add in the oil, ghee, cumin seeds, cinnamon sticks and black pepper. Leave for 1 minute
3) Then add the chopped onions and ginger garlic paste and fry for 5 minutes
4) Add in the chilli flakes, hot chilli powder and paprika
5) Let the spices cook for 4 minutes
6) Then add the tomato and cook for a further 5 minutes
7) Add in the water and salt. Let it boil and add the zest of 1 lemon
8) In a shallow pan, add in the oil and fry the chicken, this is optional but it gives the chicken a better texture

Rookie tip:
Use freshly ground spices for better flavour!!
