Dough
1 cup flour
1 tsp instant yeast
1 egg
½ tsp salt
1 tsp sugar
1 cup milk
1½ tbsp oil lukewarm water as required
• Mix all the ingredients and make a medium soft dough
• Cover with cling wrap and let it rise for 1 to 2 hours in a dark, warm place till doubled in volume
• Then divide the dough in equal balls and set aside covered with a damp cloth.
Chicken Filling
300 g chicken cubes
1 tsp kashmiri red chilli powder
½ tsp paprika
¾ tsp cumin pwd
½ tsp onion pwd
1 tsp garlic pwd
1 tsp salt
½ tsp coriander pwd
¾ tsp sugar
1 small onion sliced
1 small capsicum (choice of your colours)
1cups mozzarella cheese
• In a pan add oil & the chicken
• Add all the spices and cook the chicken
• Add the onion, and capsicum
• Mix only till the vegetables are sauteed but still crunchy
Assembly
• Roll the dough balls and place over a palm
• Add 2 to 3 tbsp filling and handful cheese
• With soft hands carefully seal the buns. Make sure there are no openings
• Place on baking paper and let them puff again for 20 – 30 minutes till doubled
• Then brush with egg. Add sesame seeds
• Bake in preheated oven at 200° for 20 to 25 min till the buns are nicely browned.
