CHICKEN AND POTATO recipe | Baked Chicken Breast | CHEESY Baked Chicken and Potatoes

Ingredients:

2 pieces Chicken Breast
1 liter Water
1/4 cup Salt (for brine)
1 medium Potato
2 small Tomatoes
1 medium Onion
4 cloves Garlic
Mozzarella Cheese
1 tsp Salt
1/2 tsp Black Pepper
1/2 tsp Garlic Powder
1/2 tsp Paprika
1 tsp Brown Sugar
1 tbsp Olive Oil

Procedure:

1. Brine the chicken breast. Mix 1 liter water and 1/4 cup salt in a bowl, stir until salt is dissolved. Put the chicken breast on the brine solution for minimum of 15 minutes up to 6 hours.
2. Prepare other ingredients. In a small bowl, mix all together the seasonings: salt, black pepper, garlic powder, paprika & brown sugar. Mince the garlic and place it on a separate bowl, add 1 tbsp olive oil.
3. Cut the potato and tomatoes into 1 inch cube. Chop the onions.
4. Brush oil into the baking pan. Place the chicken at the center. Spread the garlic & oil on the chicken top. Put the potaoes, tomatoes & onions at the side surrounding the chicken. Then add the mixed seasonings on top.
5. Cover with aluminum foil. Then put into the pre heated oven under 375°F for 35 minutes.
6. Out from the oven. Remove the cover, then add mozzarella cheese on top. Return back to the oven without cover under 375°F for5 minutes.
7. Transfer to a serving plate. Enjoy! 🍽️
