Hi and welcome back to The Kneady Homesteader Channel where today we are canning chili beans and red beans! Here are the recipes for both:
Chili Beans:
Quarts: Processing time 90 minutes
1 Cup dried beans of your choice (I used black and pinto)
1 Cup tomato sauce
1 tsp sweet or smoked paprika
1 tsp dehydrated minced onion
1 tsp granulated onion
1 tsp granulated garlic
1 tsp chili powder
1/4 tsp cumin
1/2 tsp canning salt or sea salt
Red Beans:
Quarts: Processing time 90 minutes
1 Cup dried red beans
1 Cup tomato sauce
1 tsp sweet paprika
1 tsp dehydrated minced onion
1 tsp granulated onion
1 tsp granulated garlic
1/2 tsp canning salt or sea salt
You can adjust either of these recipes to YOUR liking! This is just how my family likes it. I have added extra tomato sauce and that eliminates the need to add additional tomato sauce when making my chili. I do add onion stock or smoked ham stock to my chili, along with fresh onions and peppers and ground beef. This is perfect for canned ground beef! Red beans will be used for red beans and rice with smoked or sweet Italian sausage.
If you can in pints, make sure you cut the ingredients in half…..and process them for 75 minutes.
