Guys Guys Guys! BROCCOLI CHEESE CASSEROLE!!!! Why do we wait for the holidays and Thanksgiving for this amazing classic side dish? This could just as easily be a weekday staple. Simply add some ham or chicken to this and VOILA it quickly becomes a full entree casserole as well. Drop a comment and let me know what’s your favorite holiday casserole! ENJOY!

Here are the RULES:
2 lbs fresh broccoli florets, lightly steamed (or 3 10oz containers of frozen chopped broccoli)
1/2 cup chopped onion
1 can cream of mushroom soup (or cream of broccoli or cream of chicken)
1/2 cup mayonnaise
1/2 cup sour cream
1 egg, beaten
8 oz sharp cheddar cheese, shredded
1 tsp garlic powder
1 tsp paprika
Salt and Pepper to taste

Pre-heat oven to 375F

Steam broccoli for 5 to 10 minutes and place in an ice bath to preserve color.

In large bowl, combine wet ingredients, onion and seasonings. Add broccoli and cheese and mix well. Place in large casserole dish sprayed with cooking spray. Cover with butter crumb topping. Bake 375 for 30-40. minutes (if using fresh broccoli) OR 45-60 minutes (if using frozen broccoli)

Butter Crumb Topping:

Mix one sleeve of crushed ritz crackers and 2 tbs of melted butter.
