zaalouk is a typical maghreb’s dish, it is normally made from grilled eggplants then cooked with spices and tomatoes, garlic and herbes but this time i chose to use cauliflower. this dish can be eaten as an appetizer hot or cold with bread and it can be made in advance and put in fridge for longer use. normally it tastes better with lots of garlic but since my hubby doesn’t like garlic i chose not to put but the taste is still there. give it a try.

INGREDIENTS:
1 cauli flower cut in pieces
water for boiling
2 tbsp. olive oil
4 medium tomatoes
1tsp of the folowing:
paprika
curcuma
cumin
ginger powder
salt
pepper
and
half cup parsley and coriande
