This time I made my delicious vegan ack-o’-Lantern stuffed bell peppers for Halloween. Happy vegan Halloween ya’ll!

Here is the full recipe:
🎃🌶 Ingredients:
– 4 bell peppers
– 1 cup of cooked brown rice medley
– ¼ onion
– 1 small carrot
– 2 small tomatoes
– 1 small zucchini
– ½ tsp. of cumin
– ½ tsp. of paprika
– Salt & pepper to taste
👩🍳📝 Instructions:
1. Dice the onion, tomatoes, zucchini, and shred the carrot.
2. Carve the bell peppers to your liking.
3. Sauté the onions and the carrots for about 3 minutes.
4. Next, add the tomatoes and all the spices and sauté for another 2 minutes.
5. Add zucchini and rice and sauté for another minute.
6. Stuff the bell peppers and bake it for about 20-30 minutes at 350F.
