Hummus is a middle eastern, incredibly popular dip/spread that is made with cooked chickpeas and combined with tahini, lemon juice and garlic. It is often eaten as a starter or an appetizer with pita, vegetables, kebabs and falafel or used as a spread in sandwiches and wraps. It adds just the boost your meals may need! FULL HUMMUS RECIPE:

INGREDIENTS:
150gm white chickpeas (garbanzo)
½ cup tahini sauce (any brand)
5 tablespoon lemon/lime juice
5 cloves of roasted minced garlic (optional)
Salt to taste ( I used 3 teaspoon for this quantity)
1 tablespoon extra virgin olive oil for garnish
½ teaspoon cumin powder for ganish
½ teaspoon paprika for garnish
4 cups of water

PROCESS: STEP 1:

Soak the white chickpeas (garbanzo) in a bowl with 2 cups water. Let it soak overnight or for at least 8-10 hours
After 8-10 hour, add the chickpeas with the water that it was soaked in and also add additional 2 cups of water to the pressure cooker for 20-25 mins until the chickpeas are completely soft and mushy
Once cooked, transfer the chickpeas to a bowl with 1 cup of reserved chickpea water to use in the hummus

You can substitute canned chickpeas in this recipe , but use the blender option since canned chickpeas are not as soft as home boiled ones.
If you don’t have a pressure cooker, you can boil the chickpeas in large pot of boiling water for about 50-55 mins until chickpeas are soft and mushy

PROCESS: STEP 2: OPTIONAL

Dry roast garlic in a pan and using a garlic masher or mortar and pestle, finely crush the garlic

You can substitute raw minced garlic in this in larger quantity or less to have the garlic flavor or completely skip the garlic if you wish

PROCESS: STEP 3: FOR CHUNKY HUMMUS

In a big open bowl, add salt and lemon juice first, mix it well for 1 minute
Then add the chickpeas (garbanzo) and minced garlic and mash it using a potato masher finely for 8-10 minutes until you see the chickpeas are getting mushy
Now add the tahini sauce and mix well for another 8-10 minutes
You can add the reserved chickpea flour a little at a time until you reach desired consistency. Hummus should not be runny, so add the water in small amounts
Once all the chickpeas have mashed and the whole mixture has come together as a dip, transfer it to a bowl
Garnish with extra virgin olive oil, cumin powder and paprika
Enjoy this healthy vegetarian delicious dip with almost anything from kebabs to salads to wraps and sandwiches and much more

USING A BLENDER: FOR A SMOOTH HUMMUS

Add the lemon juice and tahini first in the blender and blend for 1 minute
Then add the chickpeas, salt and garlic and blend for another 1-2 minute
Add reserved chickpea water slowly to get the thick paste like consistency and blend
You can also add some olive oil in the blender and blend for smoother paste
Transfer to a bowl and garnish with extra virgin olive oil, cumin powder, and paprika

You can use red chili powder or sumac in alternate to paprika
