chili recipe (adjusted from champion veggie chili recipe from the How Not to Die cookbook)
1 can of diced tomatoes
3 tbsp of tomato puree
1/2 a bell pepper
lots of mushrooms
2 jalapenos
4 mini hot peppers
1 cup frozen corn
1 red onion
3 cloves of garlic
2 cups veggie broth
2 cans of black beans
1 package of beyond meat crumbles
1/4 tsp turmeric
2 tbsp chili powder
1/2 tsp smoked paprika
salt to taste
cook onion in 1 cup veggie broth over medium heat, when that’s cooked/translucent stir in all other veggies and cook until softened. add in all other ingredients including remaining cup of broth and cook for 40 minutes!
cornbread recipe (from The Joy of Vegan Baking cookbook)
1.5 cups unsweetened non-dairy milk
1.5 tbsp distilled white vinegar
1 cup cornmeal
1 cup all purpose flour
3 tbsp sugar
1/2 tsp salt
1 tsp baking powder
1 tsp baking soda
2 tbsp canola oil
1/2 cup frozen corn (optional)
combine milk & vinegar in a small bowl and set aside. in a large bowl combine all dry ingredients then add in milk/vinegar mixture, oil and corn if using. bake in a lightly oiled baking dish at 425F for 30 minutes! serve with vegan butter 🙂
