For this delicious recipe, you will need:
Dumplings:
1 cup flour
1 cup cornmeal
a pinch of salt
1 tsp baking powder
(make your dumplings first)
For the chili, you will need:
1 bag frozen meatless crumbles
olive oil
1/2 to 1 medium onion, chopped
2-3 tsp minced garlic
1 can (15 oz) each of corn, garbanzo beans, and three-bean blend (kidney, pinto, and black beans
4 cups veggie stock or broth
1 can (15 oz) tomato puree
1 can (10 oz) Rotel chopped tomatoes and jalapenos
2 tsp chili powder
2 tsp smoked paprika
1 1/2 tsp cumin
salt and pepper
Brown the crumbles in olive oil. Add spices. Add onions and garlic and cook for 8-10 minutes. Add everything else except dumpling mix and bring to a simmer. Add the dumpling batter in small spoonfuls and let simmer for 20 minutes. Serve with sour cream and cheddar cheese.
Makes awesome leftovers!!!!!
