Here it is fam! The highly requested WEEK OF VEGAN LUNCHES video! I’ve included 5 different recipes throughout to give you some tasty lunch inspo that you can take to work, school, or make whilst working/schooling from home. They all include affordable, easy to find ingredients and take 5-20 minutes to throw together.

RECIPES BELOW:

Monday – Falafel Plate
*potatoes, tossed in EVOO, smokey paprika, salt & pepper and baked at 200C/400F for 30 minutes
*Falafels – Syndian Foods but feel free to use any you find in your local grocery store!
*Roasted Garlic & Lemon Hummus
-1 can chickpeas, drained and rinsed well
-zest & juice of 1 lemon
-1 heaped tbsp unhulled tahini
-3 cloves roasted garlic
-salt & pep to taste
-1 tbsp olive oil
-1 heaped tbsp za’atar
-2 tbsp 9.5 Kangen Water (or filtered water)
*Blend in a food processor or blender til smooth and creamy

Tuesday – Chickpea Tuna

Wednesday – Noodle Salad w/ Creamy Carrot, Miso, Ginger Sauce

Thursday – TTLA
*tofu or tempeh – marinade 4 strips of either in 1/4 cup tamari + 1 tbsp maple syrup + 3 drops liquid smoke for 10 min. Cook on the stove top for a couple minutes on either side.
*ASSEMBLE – 2 slices fresh or toasted bread of choice
TOP SLICE: vegan mayo (I use Naked Byron Foods)
BOTTOM SLICE: mashed avocado
layer tomato slices on top of avo, plus cooked tofu or tempeh, then lettuce

Friday – Burger & Greens Bowl
*veggie burger of choice (I used Fry’s Family brown rice burgers cooked in my air fryer)
*lightly sautΓ© greens of choice
*assemble with cucumber, cherry tomatoes, avocado, leftover carrot miso ginger sauce or other dressing
*garnish with pumpkin seeds, chives & hemp seeds!
