🐔Creamy Chicken and Gravy on a Pillow of Mashed Potatoes 🥔
Ingredients:
4 chicken thighs, diced (you can use what you have) 🐔🐔🐔🐔
3-4 cloves garlic, minced 🧄🧄🧄-🧄
4 tablespoons butter 🧈🧈🧈🧈
salt and pepper 🧂
3 tablespoons flour
1 can chicken or veggie broth 🐔🥬
1 cup half & half or heavy cream 🥛
2 tablespoons fresh parsley, chopped 🌿
1 cup frozen peas, optional

Instructions:
1. Make mashed potatoes however you like them.
2. In a medium/large saucepan under medium-high heat, melt 1 tablespoon of butter and add diced chicken and garlic. Season with a pinch of salt and pepper. Saute until chicken is slightly browned. Remove chicken using a slotted spoon.
3. Add remaining 3 tablespoons of butter and as it melts, scrape up the browned chicken bits from the bottom of the pan. Add flour and whisk/stir until flour is incorporated into butter. Cook for 1 minute. Whisk in broth. Cook for 2 minutes. Add half & half and whisk. Stir in parsley and peas. Turn heat down and let simmer for 5-10 minutes, stirring occasionally.
4. To serve, plate a mound of mashed potatoes and ladle the creamy chicken and gravy over the top.
