You can make these delicious Moroccan inspired meatballs with out an oven and the ingredients are easy to customize according to your taste preference!
One pound of ground lamb will make about 24 golf ball sized meat balls – you can bake these in the oven or fry them in some oil in a pan. I think you will get better browning of the meat if you fry them in a pan. But if you want to make a bunch of meat balls for a party then you can bake them in the oven at 390F for about 15 minutes.
INGREDIENTS
1 pound ground lamb meat
1/4 cup fresh chopped cilantro/coriander ( if you don’t like cilantro and you can use fresh mint instead, but only use about 1/8 of a cup as mint can be very strong – you can also use fresh chopped parsley as well)
1/4 to 1/2 cup finely minced onion. ( red, white or green onion) I usually use green onion for this recipe and ended up using red onions which worked fine, but I think the green onion tastes much better.
1 to 2 fresh garlic cloves – (finely minced or grated)
1 tsp ground cumin
1 tsp ground coriander
1 tsp all spice ( if you don’t like all spice you can use smoked paprika instead)
1/2 tsp cayenne pepper ( you can use cayenne pepper or fresh minced green chilis for this recipe – your choice – and if you want it more spicy then use a full teaspoon of cayenne – or use both green chili and cayenne!)
1/2 tsp cinnamon ( yes – cinnamon works very well for this recipe!)
In a large mixing bowl combine spices into ground lamb and begin blending into the meat. I think using your hands works best, this way you can really work all those spices into every bit of the ground lamb ensuring even flavor distribution.
Roll lamb into golf ball sized meatballs, place on a plate and if you are not ready to cook yet – cover with clean wrap and place in the refrigerator. ( I don’t recommend freezing them raw.)
Oven method
Heat oven to 390 F (200c) and bake in a lightly oiled oven tray for about 15 minutes (I like to cook until lightly pink in center)
Frying method
Fry in a non stick pan over medium heat with some olive oil – browning on all sides. Total fry time will be about 7 to 8 minutes.
You can serve with some tangy yogurt sauce
1 cup Greek yogurt
1 minced garlic clove
lemon juice – to taste
and salt and pepper to taste
