This is Eech, ( pronounced… ee-t-ch ) can be eaten warm or cold, and it’s even better the next day, so if you make some…make extra! Traditionally eaten with lettuce, or young fresh tangy grape leaves.
The popular traditional drink to accompany eech is Ayran. It’s an acquired taste, you can google AYRAN- or just wait for me to make a video soon!
I usually wing it – and not follow any recipe
So play with the measurements to your liking.
Eech—
*Medium / large onion
*Salt- pepper- red pepper ( or paprika)
*Lemons
*Burgul (#1 fine)
*Parsley (any you find)
*Scallions a couple or fresh onion
*tomato paste/ purée tomato can
*optional- diced red bell pepper, sautéed
*water
____We normally don’t add bell peppers because we don’t like it cooked.
