Desi Masala Pasta:
Ingredients:
Macaroni 1 packet
Tomato puree 1 cup
Tomato ketchup 2 heaping tbsp
Paprika 1 tsp
Red chili crushed 1 tsp
Roasted cumin 1 tsp
Vegetable oil 1/4 cup
Garlic 1tsp
Green bell peppers 2 (Julienne cut)
Carrot Julienne 1
All spice powder 1 tsp
Salt and black pepper to taste
Fresh coriander for garnish
Method:
Heat the oil in a large wok add the garlic, stir-fry for a few seconds, then add the tomato puree, ketchup, paprika, crushed peppers and roasted cumin and sauté for a couple of minutes. Add the pasta, green bell peppers, black paper and the powdered spices and all spice powder. Season with salt Stir-fry the pasta and garnish with coriander.
Brown sugar cinnamon ice cream:
Ingredients:
Heavy cream 1 cup
Whole milk 1/2 cup
Brown sugar 5 tbsp
Cinnamon 1/2 tsp
Salt a pinch
Vanilla extract 1/2 tsp
Egg yolks 3 large
Method:
In a medium saucepan whisk together the heavy cream, milk, brown sugar, cinnamon, and salt. Bring it just to a simmer, stir, and then remove from the heat. Stir in the vanilla.
In a medium bowl, whisk together the yolks. Stirring constantly, add gradually of the hot liquid to the egg yolks. This helps to temper them, cooking them super slowly and bringing the temperature up gradually until the mixture is thick enough to coat the back of a spoon.
Scrape the mixture into a container and cover and Chill for at least 4 hours or overnight.
Paneer Fried Rice:
INGREDIENTS
FOR MARINATING AND ROASTING PANEER:
Cottage cheese, cubes 1 cup
Ginger garlic paste 1 tsp
Cayenne powder ¾ tsp
Salt ¼ tsp
Oil 2 tsp
FOR FRIED RICE:
Oil 4 tbsp
Garlic, finely chopped 2 cloves
Onion, finely chopped 1
Spring onion, chopped 4 tbsp
Carrot, chopped 1
French beans, chopped 4
Green capsicum, chopped 1
Cabbage, shredded 1/2 cup
Chili sauce 1 tbsp
Vinegar 1 tbsp
Soy sauce 1 tbsp
Pepper powder ½ tsp
Salt ½ tsp
Cooked rice 2 cup
Method:
In a bowl take 1 cup cottage cheese add 1 tsp ginger garlic paste, ¾ tsp chili powder and ¼ tsp salt mix well and marinate for 20 minutes then heat 2 tsp oil and fry marinated cottage cheese.
In a large wok, heat oil and sauté garlic, onion now add carrot, cabbage, beans and capsicum. Stir fry on high flame till the veggies are cooked yet crunchy add chili sauce, vinegar, soy sauce, pepper powder and salt stir fry until sauces are well combined add cooked rice stir fry on high flame combining everything well. Add in roasted cottage cheese, 2 tbsp spring onion and mix well and serve.
