Try this amazing BBQ Rice Platter which is super easy and uses minimal basic spices and yet extremely flavourful. It is inspired by middle eastern cuisine and has tender Joojeh Kabab as well as Beef Koobideh Kabab served on a bed of plain pulao rice. Serve it as is on a large platter or pair with side some fresh greens and garlic potatoes. It is truly a must for any BBQ lover.
Joojeh Kabab:
1 kg Boneless Chicken
1 medium-small onion
2-3 tbsp Yogurt
1.5 tbsp Lemon Juice
2 tbsp Olive Oil or any Vegetable Oil
1-1.5 Black Pepper
1 tbsp Saffron Water ( 1/4 tsp Saffron + 1 tbsp Water)
1-1.5 tsp Paprika – optional, skip for a traditional taste
1/2 tbsp Salt or per taste
Beef Koobideh Kebab:
500gm Lamb Mince with fat
300-350gm Beef Mince with fat
2 tsp Black Pepper Corns – crushed/ground
2-3 tsp Salt or to taste
2 medium Brown Onions – grated & excess water removed
1 tsp Paprika- optional, skip for a traditional taste
1/2 tsp Turmeric – optional, skip for a traditional taste
2 tsp Ginger Paste – optional, skip for a traditional taste
1 tsp Garlic Paste – optional, skip for a traditional taste
2 tbsp Olive Oil or any Vegetable Oil
Plain Pilaf:
3 cups Basmati Rice – Soaked for 30mins
