ROASTED RED PEPPER SAUCE

Ingredients
2 large red bell peppers
1 red onion
3 garlic cloves
4 tbsp balsamic vinegar
1-2 tsp paprika
Salt
1. Place the red peppers, onion and garlic cloves on a baking tray, lightly oiled and seasoned at 200c for 20-25minutes. (Keep in mind that the cloves and onion will take a lot quicker to roast.)
2. Allow roasted veg to cool for 10 mins before starting the next step.
3. Remove the skin of the red peppers by either peeling or scraping.
4. Place all the ingredients into a food processor or blender and blend until smooth. Make sure to add enough salt and acidity (vinegar) to the sauce.
5. Serve immediately or store in an airtight container.
