In this video we make a gooey concoction of Cheese, bacon, and Cauliflower to make a very delightful Cauliflower & Bacon “Mac” & Cheese along with my favorite recipe for Crispy Chicken thighs.
You will need;
(2) Heads of Cauliflower
2 Tsp Salt
9×12 baking dish
Bring a medium sized pot of water to a boil. Add salt once it has reached a rolling boil.
Cut Cauliflower into morsel/bite sized pieces. Throw cauliflower into boiling water and blanch for 5-6 minutes. Drain and set aside.
For the the Roux “Cheese Sauce”
2 Tbsp Butter
4 Cloves Garlic (Pressed)
2 Tbsp Flour
4 Tbsp Cream Cheese
2 Cups Milk
2.5 Cups Mild Cheddar or cheese of choice
Salt & Pepper to taste
also
6 bacon strips
1/4 cup of chives/green onions
Set oven to 350 degree Fahrenheit.
In a large pan, set med-high heat. Add butter and garlic and heat until garlic is golden brown. Add flour and whisk. Once well incorporated, slowly add milk and continue whisking making sure to whisk out any clumps of flour that may have formed.
Turn to low heat and add cream cheese and continue whisking. Once cream cheese is fully incorporated, proceed to add 2 cups of cheese. Continue to whisk until cheese is melted.
Add salt, pepper, & 4 Crumbled Bacon strips into sauce and continue whisking. Throw in your cooked cauliflower and mix it all together making sure to fully coat the cauliflower.
Pour “Mac” and cheese into 9×12 baking dish. Add additional half cup of cheese on top of dish. Crumble in additional bacon strips and top with green onions/chives.
Throw in oven for 25-30 minutes until cheese is melted and light bro occurred.
This is my super simple go-to recipe for Crispy Flavorful Chicken Thighs.
You Will need;
9-10 Chicken Thighs W/ Skin On
2 Tsp Salt
2 Tsp Ground Black Pepper (Course)
2 Tsp Paparika
2 Tsp Dried Parsley
2 Tbsp Olive Oil
Wash thighs and pat dry. Mix seasoning all together and rub chicken highs down.
In a large pan, set to high heat.
Sear chicken skin side down for about 5 minutes. Turn over and sear an additional 4 minutes.
Throw chicken in oven safe dish and cover with aluminum foil. Set oven to 350 degrees for 25-30 minutes.
