Marinated Chicken.
Chicken drumstick – 800g
Bell peppers

scotch bonnet – optional
Grated Garlic
black pepper
curry powder
white pepper
Smoked paprika
Salt
Chicken seasoning
Soy sauce
Chilli sauce
Marinate for 30 mins and grill or roast in the oven for 30 minutes @ 180°C
Jollof Rice
Red bell peppers
Onions
Scotch bonnet
Tomatoes
Chopped onions
Tomato puree
Cooking oil
Salt to taste
Chicken seasoning
Bay leaves – optional
Rice – 1kg ( wash in cold water about 3 times)
Warm water
Cook on medium to high heat for 30 mins, then reduce to low heat and let it steam for 20 mins.
