This time I cook a Cream of Sweet Potato Soup as part of the #LetsMakeSoupWars challenge hosted by Lorrie’s World YT channel.
This hearty soup is ideal for those of us pressed for time with Christmas just around the corner and is vegetarian (or even vegan) friendly for those of our families who prefer a meat free diet. This dish is ideal for a family dinner, to take to a potluck or even as something different and tasty for a side dish on Christmas eve or Christmas dinner.

Cream Of Sweet Potato Soup.
2 large Sweet Potatoes, 1 medium to large Potato, 1 Quart (1 liter) Vegetable Broth
(or Chicken, Beef Broth), 1/4 tsp Ground Cinnamon (optional), 1 tsp Dried Garlic
Granules, 1/4 to 1/2 tsp Smoked Paprika, 1 tsp Italian Herb mix, Salt & Pepper to
taste, 1/2 to a full can Coconut Cream, a little Peanut Oil, 2 dsp Maple Syrup, water as required.
