Spinach stuffed eggplant bake cauliflower & corn

Welcome to Roxy’s Delectable Table. I am sorry for not showing how I cut the eggplant.
I wash and slice eggplants put some seasalt on each slice to extract the extra water from the eggplant this will take about 10min,drain excess water off and season with Badia complete season, paprika, cayenne pepper, black pepper, fresh garlic onians red yellow and orange bell peppers and finely chopped spinach add about 2tbsp of olive oil mix together then place in-between each slices drizzle with some olive oil and bake at 350 degrees for 45 to 50 minutes 😋
wash and cut cauliflower season with Badia complete season paprika cayenne pepper and olive oil, do the same with the corn and bake away☺Remember you can add your own spices to your liking thank you!
