Simple & easy Pumpkin Soup:
Ingredients:
Pumpkin. 1/2kg
Vegetable broth(stock). 3 cups
Peeled potatoes. 2 medium size
Cooking oil. 4-5 tablespoons
Garlic. 3-4 cloves
Paprika. 1/2 teaspoon
Coriander powder. 1/2 teaspoon
Ginger powder. 1/2 teaspoon
Salt. To taste
Bread. 3 slices (to make croutons)
Preparation:
Remove skin and seeds from pumpkin and cut into small pieces,
Cut potatoes into small pieces.
Method for soup:
Pour little oil in medium heated pan, add garlic, potatoes & pumpkin , fry for 2 minutes, then add paprika, ginger powder & coriander powder. Fry for 1 minute. Add vegetables broth (stock) & salt. Cover it with lid and let it cook till vegetables are soft. Then put this mixture into blender. Blend it well. soup is ready. Transfer into serving dish.
Method for croutons:
Cut bread slices into small pieces, pour little oil in medium heated frying pan. Add pieces of bread into frying pan and fry them these are crunchy. Serve with pumpkin soup.
