Ingredient List

Extra virgin olive oil
.75 medium diced yellow onion
3 sliced garlic cloves
1 can diced tomatoes drained
5 dashes of paprika 
1.5 cups well rinsed medium grain white rice
3.5 cups saffron stock
8 peeled & deveined tail on shrimp 16-20 count
1 pound mussels cleaned 
.25 pounds bay scallops 60-80 count
.5 pounds mahi-mahi cut into 2”cubes
.5 cup of frozen peas thawed
.25 cup chopped parsley leaves
2oz. fresh squeezed lemon juice
Salt and pepper to taste

Approximate preparation time 45 minutes
