In this video, I will be sharing a recipe for Pumpkin Chili that is plant-based, vegetarian, and vegan!
Recipe Inspired by Caitlin Shoemaker:
Ingredients:
8 ounces baby bella mushrooms ($3.58)
1 tablespoon of olive oil (4.29)
1 small red onion, diced ($0.88)
1 red bell pepper, diced ($1.49)
3 cloves of garlic, minced ($1.74)
1 teaspoon ground cumin
1 teaspoon chipotle chili powder
1 teaspoon fresh thyme leaves
1 teaspoon paprika
1/2 teaspoon cayenne pepper
1 teaspoon salt
1 14.5 ounce can diced tomatoes ($1.48)
1 15 ounce can pumpkin puree ($2.36)
2 15.5 ounce cans pinto beans, drained and rinsed ($0.58 x 2)
1 1/2 cups vegetable broth ($2.78)
Optional toppings: Avocado, chives, vegan sour cream, vegan cheese
Total Recipe Price (not including spices): $19.76 or $3.95 per serving
