I’m loving these sweet potato fries for quick dinners! It’s also healthy and filling! What’s not to love? If you’re running really short on time, skip the sauce, and put sliced avocado on instead!
Ingredients:
4 sweet potatoes, cut into fries
1 tbsp chili powder
1 tsp smoked paprika
1 diced onion
1 chopped tomato
2 avocados
juice of 1 lime
1/4 cup water
1/2 cup frozen corn
1/2 cup black beans
optional: fresh cilantro to top
Preheat oven to 400 degrees.
Chop sweet potatoes, then add them baking pan and sprinkle with seasonings. Mix well. Then add to pre-heated oven for about 25 mins.
Chop onion and tomato.
Add avocados, lime, and water to a blender. Blend until it’s a sauce consistency. Add more water if it’s too thick.
Add sweet potatoes to a plate. Top with corn, beans, onion, tomato, sauce, and cilantro.
