Easy Vegan Enchiladas

Ingredients:
1-2 onions
1-2 bell peppers
Garlic
Seasoning (Smoked paprika, cumin, ground coriander, chilli flakes, chilli powder, salt, pepper)
Beans (pinto, black bean, kidney etc)
Either tofu, tempeh, seitan or a meat substitute

Cook these all in a pan, add to tortilla wraps with cheese then bake in a tray with passata for about 15-20 minutes 🌯 You can serve with crème fraiche, guacamole and corriander 🙂

Some tips:
– Cook at a medium heat and use a reasonable amount of oil so the spices don’t burn.
– You can season the passata that you add to the tray with garlic, salt & pepper.
– You can alternatively use coconut cream as crème fraiche.
– If you’re trying vegan cheese for the first time I recommend any supermarkets homebrand (they’re all made by the same company) or applewood’s smoked brand and avoid violife (personal opinion).
