I love Meal Prepping. It makes my life easy. When I have long days, don’t feel like cooking then all I need to do is open my fridge, get a meal, warm it up and I’m good to go.
These Meals are Delicious, Healthy and yes, Low Carb..
°Mushroom Stroganoff with Zoodles.
°Stir Fry Veggies with Parsnip Puree.
°Cauliflower Tabbouleh with Grilled Chicken.

**MUSHROOM STROGANOFF.**
3 Cups Mushrooms(Mix Chestnuts, Oysters, Shitakes, Cantarels).
1 Large Onion, Diced.
3 Garlic Cloves, Minced.
1½ Tsp Smoked Paprika.
1 Tbsp Coarse Whole Grain Mustard(or 1 Tsp and 1 Tsp Dijon).
½ Tbsp Tomato Paste.
3 Tbsp Flour.
3 Cups Vegetable Stock.
1 Tbsp Worcestershire Sauce or Soy Sauce
Fresh Thyme.
2 Tbsp Greek Yogurt or Sour Cream.
Finely Diced Parsley
Salt and Pepper to Taste.
2 Tbsp Olive Oil.
METHOD.
°In a Pan heat Olive Oil and Sauté the Onions. Add the diced Mushrooms and cook for about 10 minutes or until all the liquid dries out.
°Stir in; Garlic, Paprika, Thyme, Tomato Paste, Mustard, Worcestershire Soy/Sauce and Salt/Pepper. Cook for another 3 minutes the Stir in the Flour. Make sure it’s coated through and through.
°Add in the Stock, Bring to a Boil then Simmer for 10 Minutes.
°Once done switch off the fire, Stir in the Yogurt/Sour Cream and Parsley.

**CAULIFLOWER TABBOULEH.**
2 Cups Cauliflower.
4 Green Onions(Scallions) finely chopped.
1 Cucumber, deseeded and cubed.
3 Tomatoes, Seeds removed and cubed.
Paprika Mix Cubed.
1 Tin Chickpeas.
1 Cup Soy Beans(optional)
½ Cup Flat Leafed Parsley Finely diced.
¼ Cup Mint.
1 Tsp Cumin Powder.
3 Tbsp Olive Oil.
Zest of 1 Lime and Juice of 2 Limes.
Salt and Pepper to taste.
2 Garlic Cloves(Optional).
METHOD.
°Steam Cauliflower, till Al Dente….done but still crunchy. Let it cool down then mix in the rest of the vegetables.
°Make a dressing with the rest of the ingredients…
°Mix everything together.

****ZUCCHINI PASTA.****
Zucchini cut in the shape of Pasta.
2 Garlic Cloves.
Mild 🌶
Parsley or Basil.
Salt and Pepper to taste.
Olive oil and Butter.
