Baked Haddock with Crabmeat Stuffing
400°
2 lbs Haddock Fillets or any white fillets such as sole, flounder, etc.
1 Sleeve Ritz Crackers – crushed
1 Stick of Butter – melted
8 oz Can Crabmeat – drained
2 Tbsp Fresh Lemon Juice
1/4 tsp Old Bay Seasoning
1/4 tsp Pepper
1 Tbsp Parsley – chopped
Paprika
In a medium sized bowl mix crushed crackers with melted butter, add old bay, lemon & crab. Mix
well.
Line a cookie sheet with parchment paper and spray with cooking spray, arrange fish. Press stuffing onto fillets.
Squeeze additional lemon if desired and sprinkle with paprika.
Bake @ 400° for 12 – 15 minutes.
