Jamaican brown stew chicken/ Fricassee style

INGREDIENTS:
– 5 lbs leg quarters, cut in medium pieces
– a few sprigs of fresh thyme
-3 garlic cloves, crushed
– 1 scotch bonnet pepper, chopped
– 1/4 green bell pepper, chopped
– 1/4 yellow bell pepper, chopped
– 1 medium onion, chopped
– 1 tbsp seasoned salt
– 1 tbsp all- purpose seasoning
– 1 tbsp jerk seasoning
-1 tsp pimento seeds
– 1 tsp cayenne pepper
– 1 tsp garlic salt with parsley
– 1 tsp paprika
– 1 tsp black pepper
– 3 stalks scallion
– 1 tbsp browning
– ketchup
– brown sugar (or honey)
– 2 cups canola/vegetable oil
– 2 cups hot water to add to pot while cooking
– 1 sweet potato (you can also add carrots or russet potatoes)
