1 lb pasta (454 gm)
Breadcrumbs topping:
1.5 cups Panko
5 tablespoons butter
3 tablespoons parmesan cheese
For sauce:
1/2 cup butter (110 g)
2/3 cup flour (100 g)
5 cups warm milk
1 cup cream
1.5 teaspoon salt
2 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon paprika
1 teaspoon hot sauce – can be omitted or increased according to personal preference
2 cups sharp cheddar cheese (200 g)
2 cups gruyere cheese (200 g)
2 cups mozzarella cheese (200 g)
Tips:
Cook the pasta as per packet instructions but for 1 minute less.
You can use any of the following types of pasta: shell elbow or pipe rigate.
The recipe calls for 600 g of cheese. You can replace one type of cheese for another of your own preference, however it is preferable to keep at least 200 sharp cheddar cheese.
Panko can be replaced by soft breadcrumbs.
