In this video, I will show you how to make Singaporean noodles. I have made the recipe for years and have refined it to the way my family and I like. These noodles are heavily dusted in curry and spices and combined with yummy vegetables. They can be made with a different variety of vegetable, or without any vegetables at all. Prep time is 15 to 20 minutes and cooking time is 25 – 30 minutes depending on what ingredients you choose to incorporate or leave out. This delicious dish did not actually come from Singapore. You’ll be surprised to know it started in Hong Kong. Created in the 50s and 60s by chefs who wanted to create something different and exotic, so they added curry and other veggies to vermicelli noodles.

Ingredients (For 4 generous servings)
2 – 3 teaspoons Coconut oil
1 lb or already peeled and cleaned Shrimp – Can substitute with Chicken, Beef, etc.
8 ounces Asian rice sticks or rice vermicelli noodles
2 tablespoons minced ginger
4 cloves of garlic, shredded
1 ½ tablespoons on shredded Turmeric – Optional
2 lemon (or Lime), Juiced and zested
2 carrot, cut into thin strips (or buy pre-shredded)
1 jalapeño pepper, cored and thinly sliced
1 sweet onion, thinly sliced
1/2 red bell pepper, cored, seeded, and cut into 2-inch thin strips
1/2 Green bell pepper, cored, seeded, and cut into 2-inch thin strips
2 small Bok Choy – Cut into quarters lengthwise – Optional
2 – 3 tomato, cut into small cubes – Optional

Spices:
1/2 teaspoon salt, or more to taste
2 tablespoons curry powder
1/4 teaspoon ginger, powder (½ teaspoon for the shrimp and ½ teaspoon for the rest of the dish if you did not use fresh ginger)
1/4 teaspoon garlic, powder ((½ teaspoon for the shrimp and ½ teaspoon for the rest of the dish if you did not use fresh garlic)
1/4 teaspoon Turmeric, powder – Optional
1/4 teaspoon black pepper
1/4 teaspoon coriander
1/4 teaspoon Paprika – Optional

Garnish:
2 scallions, green and finely chopped
1/2 Cup Cilantro, finely chopped – Optional
