Raph's Mean Cuisine – Apricot Chicken – The Step-By-Step Recipe

You’ve seen the show, now it’s time to taste it. Here’s the step-by-step recipe, as captured on Raph’s phone. Giving it a go? Snap it, post it, tag it! #raphsmeancuisine.

Ingredients in the vid!
1: Salt the skin of your chicken lay on top of some thyme and place in the fridge.
2: Melt butter and gently cook 4 chopped cloves of garlic, mix in a cup of basmati rice.
3: Add drained beans, 2 cups water or stock, 2-3 tbs coconut milk, 1tsp smokey paprika and some thyme. Bring to boil then reduce to simmer for a minute.
4: Stir to make sure it doesn’t stick, then turn the heat off, pop a lid on and let it cook through.
5: Soften 4 cloves garlic, 3cm chunk of sliced ginger and 4 shallots in tbs of butter/oil.
6: Add the apricot nectar & 1 cup stock. Bring to boil and reduce slightly.
7: Heat wok and add chicken skin side down. Place apricot and spring onion as a good omen, baking paper or foil on top, then a pot of water or a brick wrapped in foil.
8: Strain the apricot sauce into a pan and add back some of the shallots and garlic.
9: Place in the chicken, skin side up. Add in some semi dried apricots too.
10: Serve on a nice pile of rice plus chopped chicken, apricot sauce, fresh ginger and chilli powder.
