Swiss Steak

325°

2 -2 1/2 lbs Top Round Steak
1/2 C Flour
1 tsp Salt
1/2 tsp Pepper
2 Tbsp Olive Oil
1 Medium Onion – sliced thin
3 – 4 Cloves Garlic – minced
2 Ribs Celery – chopped
1 tsp Thyme
1 tsp Oregano
1/4 tsp Pepper
1 tsp Paprika
1 Tbsp Worcestershire Sauce
28 oz Can of Whole or Crushed Tomatoes
1 C Beef or Chicken Broth
6 small Yukon Gold Potatoes – chunks
2 – 3 Carrots – peeled & sliced

Cut meat in large pieces or you can leave it whole.

Dredge meat in the flour, salt & pepper.

Drizzle oil in a dutch oven. Sear meat 2 – 3 minutes on each side, remove and set aside.

Add more oil if needed. Place onions in pot and cook until they start to brown and turn translucent, add celery & garlic. Add spices &
worcestershire sauce, stir. Add tomatoes and break apart if needed. Add meat back into pot along with the
broth, cover and place in the oven for 1 1/2 to 2 hours.

Remove from oven and add the potatoes & carrots. Cook an additional 30 – 45 minutes until the vegetables are
cooked through.
