RECIPE:
Ingredients:
a. 6- 7 Chicken Legs OR 500- 600 gms Chicken Thigh Meat (Cubed into Smaller Pieces)
b. . 1 tsp (Teaspoon) Salt
c. ¼ tsp Turmeric
d. 1 tsp Garam Masala
e. Juice of 1 lemon
f. 2 tsp of Garlic Powder
g. 1 tsp Smoke Paprika/ Kashmiri Red Chillies
h. 1 TBSP (Tablespoons) Oil
i. For the Dredging and Coating
I. 1 Cup Plain Flour / Chickpea flour (Seasoned with salt and pepper, as
needed)
II. 2 Eggs
III. 1 Cup Oats (Seasoned with salt and pepper, as needed)
j. 500 ml (or more) Oil for Frying
k. Procedure
I. Score the Leg pieces (if using Chicken Legs, bone on) all the way until the
bone
II. Season with salt, turmeric, garam masala, lemon juice, chilli powder and oil
III. Keep the chicken covered in a refrigerator, allow it to marinate for at least
an hour
IV. After an hour (or more) dredge the chicken in the flour…. Then egg and then
into the oats. Place the coated chicken in a tray, ready to fry
V. Heat oil in a medium saucepan or a Kadai
VI. Fry only a few (2-3 legs) at a time, DO NOT OVERCROWD the saucepan/
kadai
VII. Fry for several minutes on a medium flame and evenly, the chicken needs to
cook through and turn lightly golden
VIII. Take out the chicken and place it on a paper towel
IX. Finish frying off the entire batch of the chicken and keep it aside
X. Skim the oil in the pan and bring it up to a high temperature (about 175
Degrees)
XI. Fry the chicken again (Twice Fried) for 2-4 minutes, or until the oats look
crunchier. Avoid burning the Chicken☺
XII. Serve with some sauce, onion pickle and share with friends
