easy and simple baked shawarma chicken with veggies
for marinade:
1/4 cup olive oil
1/4 cup plain yogurt
1 tablespoon apple cider vinegar
1 teaspoon dried thyme
1 teaspoon paprika powder
1 teaspoon cumin powder
1 teaspoon coriander powder
2 tablespoon lemon juice
1/2 teaspoon ground ginger
1/2 teaspoon ground cinnamon
1 tablespoon grated garlic or use garlic paste
1 + 1/2 teaspoon salt or add it to your taste
1 teaspoon black pepper
1/8 teaspoon ground nutmeg
zest of 1 medium size lemon
1 tablespoon ketchup
mix everything
apply marinade to 2 pounds skinless and boneless chicken thighs
marinade overnight or for 1 hour
grease a baking tray with 2 teaspoon olive oil
slice 1 large carrot
2 medium size potatoes sliced
sprinkle some salt and pepper on the veggies
I also like to use 1 bunch asparagus – drizzle with some olive oil and put it on the sides of the tray
put your chicken on top of the carrots and potatoes
make sure you add any leftover marinade to the chicken from the bowl!
add some sliced tomatoes and sliced onions on top of the chicken
bake at 400°F for 30 to 45 minutes
