INGREDIENTS
~~~~~~~~~~~~~~~~~~~~~~~~
– 5-6 chicken breast or thighs
– 1 tbsp oil
– 5 cloves garlic
– 3-4 thai chillis
– 1 tsp smoked paprika
– 2 tsp dried oregano
– 1 tbsp red wine vinegar
– 2 tbsp olive oil
– Half lemon juice & zest
– 1 tsb sea salt
– 1/2 tsb black pepper powder

METHOD
~~~~~~~~~~~~~~~~~~~~~~~~
– Take pestle and mortar, bash the garlic and chilli together until you have a smooth paste. Add smoked paprika, oregano, ref wine vinegar, olive oil, lemon juice & zest, muddled well to combine.
– Place the chicken in a bowl, add the muddled sauce and mix it well now keep the chicken marination aside for minimum 2 hour.
– Heat a grill pan over a high heat with adding oil. Now drop the marinated chicken on grill pan and cook each side for 8-10 minutes on medium heat, turn and cook for a further 8-10 minutes on the other side or until cooked all the way through.
– Remove the chicken onto serving platter, drizzle with the chimmichurri sauce γDon’t worry I π¨βπ³ have got that covered as well γ& garnish with lemon π wedges.
