INGREDIENTS:
For Chicken Marinade
– 1 lbs Boneless Chicken Breasts
– ¼ cup Olive oil
– 1 Tbsp Fresh Lime Juice
– 4 cloves Garlic chopped
– 1 Tsp Ground Cumin
– 1 Tsp Paprika
– 1 Tsp Chipotle Spice Mix
– 1 Tbsp Taco Seasoning
– 1 Tsp Salt
– 1 Tbsp Ground Black Pepper
To serve
– 1 Tbsp Canola Oil
– 3 medium sized Tortilla shells
– 1 medium sized Red Onion chopped
– 1 medium sized Tomato chopped
– 1 medium sized Green Bell Pepper chopped
– 3 Tbsp Lime Juice
– 1 cup Slaw
Cilantro Lime Crema
– 1 cup Sour Cream
– 1 Tbsp chopped Cilantro
– 1 Tbsp Fresh Lime Juice
– 1 Tsp Salt
– 1 Tsp Ground Black Pepper
1) In a bowl, combine all the Chicken Marinade ingredients and mix well. Add the chicken pieces and mix well. Cover and refrigerate for 1 hour.
2) Heat Canola oil in a Grill Pan and Grill the Chicken until it gets charred from both sides.Cool the chicken and cut into bite-sized chunks.
3) Lightly toast the Tortilla shell and fill it with the coleslaw, the onions, pepper, tomato, and the Chicken Pieces. Drizzle Lime Juice on top.
4) To make this No Mayonnaise Crema, combine sour cream with cilantro, lime juice, salt, and pepper. Mix everything and drizzle over your Tacos. Enjoy!
