Fun cooking. Jump in and learn this great recipe as we journey into our “street Food ” series. We’re starting in Mexico, Oaxaca City where the Tlayudas are born. Enjoy the flavours and vibrant colours of this recipe.

What you’ll need
6 – 10” flour tortillas
1 tin organic refried beans
½ head shredded cabbage
1 cup julienne carrots
4 thinly sliced radishes
2-3 sliced shallots
¾ tsp slat
1 cucumber seeded, sliced
¼ cup green onions
½ cup cilantro
1 tbsp chopped jalapeno
2 tbsp olive oil
3 tbsp lime juice

Chicken carnitas
500g chicken thighs
(skin and bone off)
1 onion diced
1 tbsp olive oil
3 garlic cloves
1 tbsp cumin
1 tbsp dry coriander
1 tbsp chilli powder
2 tsp salt
¼ chipotle powder
1 cup of water
1 tbsp apple cider vinegar

Walnut chorizo
1 cup walnuts
½ teaspoon salt
1 tsp each of garlic powder, cumin, coriander, smoked paprika, chilli powder
1 tbsp tomato paste
1 tbsp water

Avocado dressing
2 medium ripe avocado
4-6 slices jalapeno
1 garlic clove
¼- ½ cup of cilantro
2 tbsp olive oil
2 tbsp lime juice
4 tbsp water
½ tsp salt
