4 QUICK & EASY VEGGIE AND VEGAN MEALS | WINTER MEAL IDEAS

I hope you are all doing well. Welcome back to my channel and to my FIRST recipe video of 2022! I am so excited to bring these videos back! I am kicking off the year with these four super simple but absolutely delicious recipes. All ingredients are listed below.

RECIPES:

CREAMY MUSHROOM & SPINACH PASTA: Serves 3-4
– 3 shallots
– 2tbsp olive oil
– 250g Conchiglie
– 200g Shittake & Chestnut Mushrooms
– 100g washed spinach
– 3 cloves of garlic
– grating of nutmeg
– 50ml white wine
– 1tsp wholegrain mustard
– 50ml double cream
– 25g veggie parmesan
– salt and pepper to taste
SQUASH & CHILLI RISOTTO: Serves 3-4
– 1 medium butternut squash
– 3 shallots
– 2 cloves of garlic
– 1 red chilli
– 100g chestnut mushrooms
– 150g risotto rice
– 100g frozen peas
– 100ml dry white wine
– 800ml vegetable stock
– 20g unsalted butter
– 1tbsp olive oil
– 75g veggie parmesan
SPICY BEAN CHILLI CON CARNE: Serves 6-8 or 4 with leftovers
– 3 mixed peppers, red, yellow & green
– 1 large red onion
– 2 chillis, mixed colours
– 3 cloves of garlic
– 2 cans of chopped tomatoes
– 2tsp smoked paprika
– 1tsp cayenne papper
– 1tsp cumin
– 1/2tsp cinnamon
– 20g dark chocolate
– 150ml instant brewed coffee
– 3 cans of mixed beans of your choice
– 1 lime, juice & zest
– handful of fresh corinader
CAULIFLOWER TACOS:
– 1 large cauliflower
– 1 red onion
– 3 garlic cloves
– 2 limes, juiced
– 4/5 jalapeΓ±os
– handful of fresh coriander
– 2 sweet potatoes
– 4tsp smoked paprika (2 for cauliflower, 2 for sweet potato)
– 2tsp cumin (1 for cauliflower, 1 for sweet potato)
– 1tsp rock salt
– 100g cashew nuts
– 4tbsp water
– 6 soft shell tortilla wraps
– 1 large avocado
