***A. BISTEK TAGALOG (FILIPINO-STYLE BEEF STEAK)***
Ingredients [Serves 4 to 6 persons]:
1/2 kg sirloin beef
1 pc big onion
1/2 cup soy sauce
1 tbsp oyster sauce
6 to 10 pcs calamansi (or lemon)
fish sauce (patis) to taste
vegetable oil
Procedure:
1. In a bowl, soak beef in lemon(or calamansi) and soy sauce.
2. Marinate for at least 30 minutes.
3. Sauté beef for 2 to 4 minutes on each side and set aside.
4. Heat oil in a separate pan. Transfer beef. Add oyster sauce and juice marinade. Cover the pan and let it simmer until beef is tender.
5. Add onion.
6. Transfer on a plate and serve. Perfect match with a cup of steaming rice.
Tips:
1. Use sirloin beef strips as it is among the most tender and juiciest parts of pork beef.
2. Marinate the beef overnight for best results.
3. Though white onion is typically used, red onion provides sweeter taste and aroma in beef steak.
4. For added flavor, optional to add in the marinade other herbs and spices such as pepper, paprika, cumin, etc.
***B. SARCIADONG TILAPIA (TILAPIA FISH BRAISED IN SAUTEÉD TOMATOES)***
Ingredients [Serves 5 persons]:
5 pcs fresh tilapia fish (medium size)
6 pcs tomato (chopped)
1 pc big onion (chopped)
2 pcs egg
3 gloves garlic (chopped)
1 cup water
1 tsp salt
cooking oil
Procedure:
1. Prepare tilapia.
2. Heat oil in a wide frying pan. Put-in the tilapia and cover the pan. Fry fish for 5 to 8 minutes per side or until sizzling and spattering of oil receded. Set aside.
3. Sauté garlic, onion, and tomato in a separate pan.
4. Add water on the sauté. Pour in some fish sauce(patis) and cover the pan to simmer.
5. Add the fried tilapia and cover the pan again for a few minutes.
6. Add the scrambled egg, let it cook for few minutes.
7. Transfer on a plate and serve.
Tips:
1. Make sure that the oil is heated enough before frying the fish. For crispier skin, push the fish flat while frying to ensure all of its skin touches the pan.
2. Keep the dish refrigerated if to be consumed on the next day. Tomatoes can easily rotten if exposed to high temperature.
***C. CHOPSUEY (STIR FRY VEGETABLES)***
Ingredients [Serves 5 to 6 persons]:
1/4 kg shrimp (chopped)
2 cups cabbage (chopped)
1/4 cup carrots (chopped)
1/4 cup young corn
1/4 cup cauliflower (chopped)
1/4 cup sayote (chopped)
1 pc green bell pepper (chopped)
1 1/2 cup water
2 tsp cornstarch (dissolved in water)
3 cloves garlic (chopped)
1 pc onion (minced)
4 tbsp soy sauce
4 tbsp oyster sauce
pepper and fish sauce (patis) to taste
cooking oil
Procedure:
1. Sauté garlic, onion and shrimp in medium heated pan.
2. Add soy sauce and mix well.
3. Once the sauté is cooked, add in the vegetables – young corn, carrots, sayote.
4. Add water, cover the pan and let it simmer.
5. Add the cauliflower and bell pepper. Season with oyster sauce and fish paste to taste.
6. Pour in the cornstarch solution and mix well. Cover the pan and let it simmer for a while to cook the vegetables.
7. Put some pepper to taste. Add the cabbage and let it simmer for another minute.
8. Transfer on a plate and serve.
Tips:
1. Do not overcook vegetables to preserve vitamins and minerals.
2. When stir-frying vegetables, root crops such as carrots must be cooked first since they require more time to cook.
3. Wash vegetables thoroughly in a clean cool water. Using other substances other than water is highly discouraged.
***D. MISWA BOLA-BOLA (NOODLES & MEATBALLS SOUP)***
Ingredients [Serves 6 persons]:
1/2 kg pork giniling
2 packs misua noodles
2 pcs egg (scrambled)
1/2 cup flour
1/2 cup carrot (grated)
1/4 cup celery (chopped)
1/4 cup green onion (chopped)
4 cloves garlic (chopped)
1 pc onion (medium size)
4 cups water
salt and pepper to taste
cooking oil
Procedure:
1. Using 2 pieces of eggs and flour, combine ground pork with red onion, celery, carrots. Season with salt and pepper. For into meatballs and set aside.
2. Sauté garlic and onion in medium heated pan.
3. Once the sauté is done, add water and season with fish sauce to taste. Cover the pan and let it simmer for a while.
4. Add the meatballs, misua noodles and spring onion. Let it simmer for a few minutes.
5. Transfer on a bowl and serve.
Tips:
1. Eggs, flour, and other similar binders mixed with milk can keep moist and tender.
2. Spring onions are great source of calcium and vitamin C.
