In this video I will be showing you how to smoke a 17lb Prime Brisket. The total cook time was 23 hours at 225 degrees and rested for another hour for a total of 24 hours. I injected the brisket with beer, Worcestershire sauce, and teriyaki sauce. I made a rub from scratch with ingredients listed below and the beer for this video is Stone Brewings Arrogant Bastard Ale. I hope you enjoy and don’t forget to subscribe.
Brisket rub:
1/4 cup brown sugar
1/4 cup smoked paprika
3 tbsp pink salt
2 tbsp black pepper
1 tbsp chili powder
1 tbsp ancho chili powder
1 tbsp ground coriander
1 tbsp garlic powder
1 tbsp celery seed
1 tbsp onion powder
