红甜椒 160g (1个大号)
海盐 1.5g (¼ 茶匙)
大蒜 24g (3瓣)
番茄泥 34g (2 汤匙)
孜然粉 3g (1 茶匙)
甜味/烟熏味红椒粉 1g (½ 茶匙)
番茄罐头 800g (3杯)
香菜 7g (2 汤匙)
现磨海盐 6g (1 茶匙) 调整用量
现磨黑胡椒 2g (少于1 茶匙)
鸡蛋 6个 (大号)
现磨海盐 2g (略少于½ 茶匙)
现磨黑胡椒 0.5g (¼ 茶匙)
自制皮塔饼 6张
步骤:
热锅,加橄榄油,洋葱碎,红甜椒碎翻炒出香味,加少许盐,炒5-6分钟
加蒜蓉,番茄泥,孜然粉和红椒粉,炒1-2分钟
加带汁番茄,香菜,海盐和黑胡椒粉,尝味,调整盐用量,煮5分钟
关火,打入6个鸡蛋,中小活焖5-8分钟
鸡蛋上撒适量的盐和黑胡椒粉调味,撒香菜叶或欧芹叶装饰
搭配自制皮塔饼,趁热吃

Yellow Onion 320g (1 Large)
Sweet Red Bell Pepper 160g (1 Large)
Sea Salt 1.5g (¼ Tsp)
Garlic 24g (3 Cloves)
Tomato Paste 34g (2 Tbsp)
Cumin Powder 3g (1 Tsp)
Sweet/Smoked Paprika 1g (½ Tsp)
Canned Whole Tomato 800g (3 Cup)
Fresh Cilantro 7g (2 Tbsp)
Freshly Ground Sea Salt 6g (1 Tsp) Amount Adjustable
Freshly Ground Black Pepper 2g (Less Than 1 Tsp)
Eggs 6 (Large)
Freshly Ground Sea Salt 2g (Less Than ½ Tsp)
Freshly Ground Black Pepper 0.5g (¼ Tsp)
Homemade Pita Bread 6
Steps:
Heat the pan nice and warm. Add olive oil, diced onion, diced red bell pepper, stir until fragrant, add some salt and stir fry for 5-6 Min.
Add minced garlic, tomato paste, cumin powder and paprika, stir for 1-2 Min.
Add crushed tomato with juice, chopped fresh cilantro, freshly ground sea salt and black pepper. Taste and adjust the amount of sea salt. Cook for 5-6 Min.
Turn off the heat. Make 6 “wells” and add in the eggs. Cook on Medium-low heat for 5-8 Min.
Sprinkle some freshly ground sea salt and black pepper on the eggs. Decorate with some fresh cilantro leaves or flat-leaf parsley.
Serve immediately with the homemade pita bread.
